Pancakes are a big deal in our house, and running out of batter can send the whole house into a frenzy… until they realize, we can make our own batter. Just a few simple ingredients, and we are on our way to pancake heaven. With these basic ingredients, you can make an incredible array of flavors from apple pancakes to savory peanut butter pancakes, and you can even thin the recipe for some tasty crepes filled with fruits, ice cream or yogurt. The other upside of making your pancakes from scratch, you can mix a large amount of the core ingredients and store for the next time you want a pancake feast.
3 cups of all-purpose flour
5 teaspoon of baking powder
1 teaspoon of salt
1 teaspoon of sugar
1/2 teaspoon of cinnamon
(The portion above is the dry ingredients that should be sifted and stored for future use. When you are ready to make your pancakes or crepes, mixed the remaining ingredients from below.)
1 cup of dry ingredient from above mixture
1/2 teaspoon of vanilla extract
1 tablespoon of canola oil
1 cup of milk (allergic? use almond or soy milk)
1 beaten egg
Optional 1/4 cup of semi-sweet dark chocolate or fresh blueberries
(Stir ingredients together until just mixed and pour 1/4 cup of mixture onto medium hot oil coated pan, not too much oil…just enough to coat and keep the pancake from sticking. For making a crepes add an additional 1/4 of milk, stir until completely blended, and spread out a thin layer of batter onto a medium hot pan. When pits start to show through on top and edges start to brown, flip to cook other side.)
Serve with syrup, jam, and/or peanut butter.
